Black Bean Burger


The Patty 

16oz. or 15.5oz of rinse black beans 

1/2 cup oats or rice cereal (gluten free)

1 egg

olive oil for pan

S&P to taste or a burger seasoning you like, even cumin is nice.


In food processor put oats or rice cereal in and pulse about 3 times, add half the black beans , egg and seasoning pulse about 6 to 7 times. Add the rest of the beans and oat/rice mixture to a bowl mix thoroughly together and with clean slightly wet hands form 4 patties the place on plate an put in fridge to let them setup about an hour.  When ready add olive oil to saute pan on medium heat cook patties 3-4 minutes a side, they should have a slightly brown crisp look.

Your toppings can be what ever would like from cheese, avocado, salsa, onion, pickles, jerk sauce etc..

served on whole wheat buns, romaine lettuce or a gluten free bun.

Food for all Those Hungry Stars at The Golden Globes.

As I was watching the Golden Globes I saw Julia Louis-Dreyfus eating a hot dog and thought what the hell, a hot dog?  So I looked it up and this is what they are really eating. From CBS NEWS:


First of all plenty of alcohol. Fact Golden Globes is the only award show where guest get drinks. 

It starts off with an appetizer trio of grilled eggplant with sundried tomato and pine nut hummus on seared tomato; mini sweet pepper with feta cheese, pomegranate, herbs and California olive oil on grilled pita; and grilled artichoke on multigrain tabbouleh and tahini.
Mediterranean spice-crusted braised beef short rib and sauteed smoked filet of Atlantic sea trout are on the menu for the entree, with spinach sweet corn ragout and light cream of tomato dill sauce. And after dinner comes a mango dessert on almond sponge cake with creme anglaise.

QUIRKY

Back in September, I caught an episode of the Jay Leno Show and saw this ingenious company called Quirky and was amazed.  I had to check the company out for myself and was even more amazed so I joined and started influencing new ideas.  Here is the video.




One of the products I thought was so cool is the Egg Minder dubbed "THE SMART EGG TRAY". Have you ever been at a grocery store and was not sure how many eggs you have?  Well that is the thing of the past this baby links up with your smart phone and lets you know how many you have and how old they are.  I know that I have had that very problem. Paleo Diet Eat and Avoid

Ever since I started this new career in the professional truck driving field I haven't been able to drink alcohol in fact I went without alcohol for just 46 days. Being in the culinary field I have heard of the Paleo Diet, only I never tried to follow it, although I pretty much was doing it anyway other than the alcohol consumption. Now that I am a truck driving I realized that this my be the perfect diet or health plan for me. I am now going to start down this path so here is what I should eat and avoid.

What I CRAVE

My earlier post "My Starbucks" I talked about going to well to Starbucks to has some delicious coffee and to people watch.  Well the place I chose to go to Starbucks was the Mall of  America it has two of them besides if I wanted to go walk around and it was a great place to choose.

When I got to the MOA I was hungry so I thought maybe I would go to Chipotle, instead I walked past a restaurant called CRAVE.  I have been to CRAVE many times since I have friends who work there a few servers and a chef who was my executive chef while I was the sous chef at OM restaurant, which later I became executive chef of.

I made the decision to go to CRAVE since they have a great small plates happy hour from 3pm to 6pm.  What a great choice it was the Kogi Beef tacos were delicious with a side of beer, I ended up having to sets of those tacos, one set being comped.  I got to talk with Amanda one of the friends I talked about and Jaime Sierra the Chef I mentioned.

I Love a Great Gyro

I had a craving today and that craving was a gyro (yeer-oh) a great place to go just happens to be in the neighborhood walking distance (big smile on my face).  The place is call Gyropolis I actually go quite a bit however today I thought I would share a picture and a bit more.  Here's the local Urbanspoon rating 96%.  I give it 100% for my satisfaction factor.

Three Citrus Spicy Shrimp Pasta

Was hungry and all I had was an orange, lemon and a lime. I had shrimp in the freezer and pasta in the cupboard. Grab the pepper flakes, sugar and salt & pepper with butter and a touch of EVOO. Squeezed all the juices from the fruit into the bowl added salt & pepper, sugar, pepper flakes then marinated the shrimp for about 10 minutes. I poured the marinade into a sauté pan reduce the marinade to a nice citrus sauce. Realized I had some artichokes and threw them and the shrimp in to sauté with EVOO and butter and a pinch of s&p. Then the pasta I had cooked during the marinading then added the sauce. It was so good.

Ham and Swiss Quiche #food #recipe



Preheat oven to 425 degrees

Beat together

9 eggs

3/4 cup small dice ham

3/4 cup small dice Swiss cheese

2 diced roma tomatoes

1 about 1/2 cup small onion diced

1 to 2 jalapeno deveined and diced

1/4 chopped cilantro or parsley

Put filling in a 9 inch pie crust homemade or store bought which ever you feel comfortable with.

Bake for 15 minutes at 425 then reduce heat to 350 and bake for another 25 minutes


The crust I used was store bought just to kill some time.

Whisky Onions

Okay here is one of my favorite complements to red meat, pork, or wild game. Whiskey Onion recipe is so good I make it every time I grill. I even make Whiskey Onions when I make meat loaf for my Whiskey Onion Meat Loaf.
What you need.
5 to 6 onions about 1 lb each Vadalia onions are my favorite for this recipe
3/4 cup of red wine
1 cup whiskey what ever brand you like.
1/2 cup brown surger
2  Tablespoons Dijon mustard
1 Tablespoon Worcestershire sauce
salt and pepper to taste
2 Tablespoons butter
2 Tablespons oil
  1. Slice your onions as thin as you like then in a large pan melt your butter and add the oil. Then add your onions and carmelize on mediun heat to a deep brown but not burn onion.
  2. When you got the onions to a nice color add rest of you ingredients. Reduce the Whiskey and wine to almost nothing.
Now you have a great onion side for steak, burgers, chops. You can also take and add the onions to a favorite meatloaf recipe.
Couple other things you can add to the Whiskey Onions
  1. Jalapeno’s as about 1 to 3 or if you like heat add more
  2. Mushrooms about 1 lb.
